At CHOCOLĀ, we work with cacao from different origins because each region brings its own character to the finished chocolate. Climate, soil, cacao variety, fermentation and post-harvest handling all influence flavor.
That is why chocolate from Belize can taste very different from chocolate from Guatemala, Ecuador, Venezuela or Peru.
Depending on the origin, you may discover fruity, nutty, floral, caramel-like, earthy or deeply cocoa-forward notes.
Our role as bean-to-bar chocolate makers is not to hide these differences, but to reveal them.
That is why we keep our recipes simple: cacao beans, unrefined cane sugar and, where needed, cocoa butter.
